4 tablespoons butter
¼ cup flour
2 ½ cups heavy whipping cream
1 (8oz) package white American cheese, shredded
2 cups shredded mozzarella cheese
½ cup chopped fresh cilantro
2-4 tablespoons salsa or Pico De Gallo
Seasoning (recipe follows)
In a large saucepan, whisk butter and flour together over medium heat; cook until golden brown, whisking constantly. Whisk heavy cream to make cream sauce, stirring often to make sure there are no lumps. Add cheese, and stir constantly until thoroughly melted. Add chopped cilantro and stir thoroughly. Place queso in cast iron skillet over medium heat. Place salsa in the center of the queso. Generously sprinkle seasoning on top of queso. Serve with tortilla chips.
Season: 1 tsp ground cinnamon, 1 tsp ground cumin & 1 tsp paprika (mix together and place in shaker).
